Can the camera automatically capture participants?
Does the camera automatically zoom in on the participants? If so, can this function also be deactivated?

No, CAM340+ does not have SmartFrame (autoframe). There is no need to deactivate anything. You can zoom in manually using the remote (which comes with the product). If you wanted to set up a preset you could set this up using the remote control buttons to zoom into a specific spot if needed.
