The only difference is that the headphones with Google Assistant like Bose's have their own button for the assistant. But also with the predecessor model you can activate the assistant by pressing the Actions button for a longer time. Yes, on many models it should be possible to activate it by holding the pause button etc. for a longer time and if not you have to start the assistant on the smartphone.
"Ok Google" probably does not work because it would need a lot of battery especially with Bluetooth headphones.
