CAN is a serial communication standard, working on the first two layers of the OSI model, the Physical and Data layers (working on the same layers as the Ethernet standard - but with different functions). It defines the data coding and electrical pulses on the two-wire communication lines.
CANopen on the other side is a CAN-based high layer protocol for distributed industrial automation technology. It is developed as a standardized ded network with high flexible configuration capabilities, originally designed for motion-oriented machine control systems.
The comparison between CAN and CANopen is similar to comparing Ethernet with EtherNet/IP.
