We had the same problem, but with the Rally system. Sometimes the connection between the display and the Table Hub was faulty, and to this day I couldn't figure out why. But it would shut down at similar time intervals. On Mac and on Windows and with different softwares.
What solved the problem so far (system has been running for two weeks) was replacing the camera USB-C cable.
